    Perfect Pie Crust

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    4 cups unsifted flour
    2 teaspoons salt
    1 tablespoon sugar
    1 3/4 cups solid vegetable shortening -- good quality
    1/2 cup cold water
    1 large egg
    1 tablespoon white vinegar

    Sift flour, salt, and sugar together in large mixing bowl. Cut in shortening until mixture resembles cornmeal. Beat egg and add to water and vinegar. Slowly add to flour, shortening mixture. Blend just until mixture clings together.

    Chill 30 minutes. Divide dough in half. Roll out on lightly floured board to 1/8-inch thickness. Fill with desired fruit or custard filling and bake.

    Enough crust to make a double pie crust.
