4 red bell peppers
Preheat the broiler.
Line a broiling pan with aluminum foil. Place the peppers in the pan and broil for 15 to 20 minutes, turning frequently until peppers are charred black on all sides.
Remove the peppers from the pan and place in a paper bag. Allow to cool for about 10 minutes. When cool enough to handle, hold each pepper under cold, running water and scrape away the charred skin using a paring knife. Rinse the peppers to remove the last bits of skin, and place on paper towels to dry.
The peppers may now be sliced and served with olive oil and pressed garlic as an appetizer or side dish, or used as an ingredient in other recipes.
Judi's Note: Do not hold under water as precious juice and oils are rinsed away. Just peel away skin in a bowl to catch all the flavorful drippings.
