    Kennebunkport Crabmeat Souffle

    Amount Measure Ingredient -- Preparation Method

    8 slices white bread -- trimmed
    2 cups crabmeat
    1 medium onion -- finely diced
    1 cup celery -- finely diced
    1 medium green bell pepper -- finely diced
    1 1/2 cups shredded Cheddar cheese -- divided
    2 cups milk
    4 eggs -- beaten
    1/2 cup mayonnaise

    Put half the bread in a greased 13-inch x 9-inch casserole.

    In a bowl, combine the crabmeat, onions, celery, bell peppers, 1 1/4 cups of the cheese, milk, eggs, and mayonnaise. Mix well and pour over the bread. Cover with the remaining bread and sprinkle with the remaining 1/4 cup cheese. Bake in a preheated 350 degree oven for 1 hour.
