Yankee Pot Roast #1

2 garlic cloves -- minced
1 tablespoon butter or margarine
1 beef pot roast (3-4 lbs)
salt -- to taste
pepper -- to taste
flour
1 large onion -- thinly sliced
12 whole peppercorns
12 whole allspice berries
1 bay leaf
1 tablespoon grated fresh horseradish
1/2 cup dry red wine or rum
1/2 cup water
In a skillet, saute garlic in the butter or margarine until golden. Sprinkle the meat with salt and pepper, and the flour and brown well on all sides in the garlic butter. Spread a layer of onions in a large, heavy-bottomed pot with a tight-fitting lid. Place the meat on top and add the garlic butter, peppercorns, allspice, bay leaf, and horseradish. Pour in the wine or rum and water, cover tightly and simmer in a 300 degree F. oven for 2 to 3 hours, or until tender.
Remove the meat to a serving platter. Defat the drippings, then heat in the pot and season to taste. Pour over the meat and serve.
This serves 6 to 8.
