1/4 pound bulk sausage (preferably
-- spicy hot)
1/2 cup onion -- chopped
1 pound turnips (about 3) -- peeled and diced
2 carrots -- peeled and diced
3 1/2 cups chicken stock
3 cups water (to 4 cups)
1/2 teaspoon salt or to taste
1/2 cup uncooked brown rice
1 package frozen black-eyed peas

8 ounces fresh mustard greens -- rinsed well,
-- (drained and shredded)
or
1 package frozen chopped mustard -- defrosted
-- (8 oz)
or
1 package frozen turnip greens -- defrosted
1/2 teaspoon red pepper flakes
Brown sausage in large pot or Dutch oven over medium-high heat. Pour sausage into colander to drain off fat. Wipe out pot and return sausage to pot.
Add onion, turnips, and carrots; cook for 5 minutes, stirring often, until onions are soft. Add chicken stock and water. Bring to a boil and add salt and rice.
Lower heat to simmer. After 20 minutes, add black-eyed peas and greens; cook 20 minutes longer until rice and vegetables are tender. Add red pepper flakes and adjust seasoning to taste.
