    Unca' Charlie's Creamy Peanut Soup

    Amount Measure Ingredient -- Preparation Method

    6 tablespoons butter (3/4 stick)
    4 green onions -- finely chopped
    2 celery ribs -- finely chopped
    3 tablespoons all-purpose flour
    4 cups fresh chicken stock
    1 cup creamy peanut butter
    1/2 teaspoon salt
    2 teaspoons fresh lemon juice
    1 cup half-and-half
    1/2 cup peanuts -- finely chopped

    In a large, heavy pot, melt the butter, then add the onions and celery and cook over low heat 5 minutes, stirring. Sprinkle in the flour and stir till well blended. Add the stock and bring the mixture to a boil. Add the peanut butter, salt, and lemon juice, stir well, reduce the heat to low, and simmer, stirring till the mixture is smooth, about 20 minutes. Add the half-and-half and heat, never allowing the soup to boil.

    Serve the soup with the chopped peanuts to be sprinkled on top.
