Baked Grits with Cheese and Jalapenos

1 cup quick grits (uncooked)
6 tablespoons butter or margarine
8 ounces Monterey Jack cheese -- cut into
-- 1/2-inch chunks
1/4 cup pickled Jalapeno peppers -- chopped
1 medium red bell pepper -- chopped
4 whole scallions -- chopped
1 teaspoon salt
2 large eggs -- slightly beaten
Preheat oven to 325 degrees F.
Butter a 13x9-inch baking dish. Prepare grits according to package instructions. When the grits have started to thicken, stir in all ingredients except the eggs. Blend well until cheese is mostly melted. Fold in the eggs; spoon mixture into buttered baking dish. Bake in oven until bubbly and slightly browned, about 45 minutes. Allow a few minutes to cool and set. Cut into squares and serve as a side dish.
Optionally, after the grits has cooled, cut into serving size squares and then fry in butter before serving.
Judi's note: If pickled Jalapeno peppers are not available, use fresh jalapenos.
