    SWS: Tacos Con Puerco

    Source of Recipe

"Tex-Mex Recipes" by Publications International Ltd.

    1 pound ground pork
1 can whole tomatoes -- undrained, cut
    -- up (8 oz)
    1/4 cup onion -- chopped
    1 tablespoon chili powder
    1/4 teaspoon garlic powder*
    salt
    pepper
    8 taco shells
2 fresh tomatoes -- cut into wedges
2 cups iceberg lettuce -- shredded

In heavy skillet, brown ground pork; stir in undrained canned tomatoes, onion, chili powder, and garlic powder. Bring to a boil; reduce heat and simmer, uncovered, until most liquid evaporates, about 15 minutes, stirring occasionally. Season to taste with salt and pepper. Heat taco shells according to package directions. Portion filling into shells; top with fresh tomatoes and lettuce.

*Judi's note: This tastes much better with fresh garlic, minced (use about 2 cloves) and cook with pork and onion while they are browning.
