Apricot Almond Rice

Recipe Introduction
I have had this recipe in my files for the longest time and finally got to try it last week. Very simple recipe that is delicious and very easy to make. /jmp
2 tablespoons butter
1 cup long-grain rice
1/2 cup onion -- chopped
1/2 cup celery -- chopped
2 cups chicken stock
1/2 cup dried apricots -- diced
1/2 teaspoon ground ginger
salt
1/2 cup almonds, sliced and toasted
In large skillet, melt butter; cook rice, onion and celery over medium heat, stirring, for about 6 minutes or until rice is golden and onion is softened.
Stir in stock, apricots and ginger; bring to boil. Cover and reduce heat to medium-low; simmer for 15-20 minutes or until rice is tender and liquid is absorbed. Season with salt to taste.
Sprinkle almonds over top.
Yield: 6 servings
