    Apricot Mold with Yogurt, Bananas, & Coconut

    Amount Measure Ingredient -- Preparation Method

    1 package apricot gelatin (6 oz)
    1 can apricots (1 lb 12 oz) -- drained (reserve
    -- juice) remove pits and chop
    1 1/2 cups water and
    reserved juice
    -- (total 1 1/2 cups)
    2 cups plain unflavored yogurt
    2 bananas -- sliced
    6 tablespoons coconut flakes
    sour cream -- for dipping banana

    Place gelatin in a large bowl. Heat to boiling the water and apricot juice and add it to the gelatin. Stir until gelatin is dissolved. Add yogurt and stir until blended. Add remaining ingredients and stir to mix well.

    Pour mixture into a 2-quart mold and refrigerate until firm. Unmold on a lovely platter and decorate with banana slices that were dipped in sour cream and then in coconut flakes.
