1 can pitted Bing cherries
-- (1 lb, 14 oz)
1 cup boiling water
1 package cherry-flavored gelatin

3/4 cup cream sherry
1 cup chopped pecans
1 package cream cheese (3 oz) -- chilled

Drain cherries, reserving liquid. Pour boiling water over gelatin in medium bowl; stir until gelatin dissolves. Stir in sherry or 3/4 cup liquid from cherries. Refrigerate until consistency of unbeaten egg white -- about 1 hour. Add drained cherries and nuts. Cube cream cheese, and add to gelatin mixture; mix well. Turn into 8-inch square pan or 5-cup mold.
Refrigerate until firm -- several hours. Unmold on crisp greens. Nice to serve as a dessert salad.
