    Red and Green Couscous Salad

    Amount Measure Ingredient -- Preparation Method

    1 cup uncooked couscous
    1/4 cup vegetable oil
    2 tablespoons balsamic vinegar
    3 tablespoons fresh Italian parsley -- chopped
    2 garlic cloves -- minced
    1 teaspoon salt
    1/4 teaspoon pepper
    2 Roma tomatoes -- diced
    1 small zucchini -- cut in julienne
    -- strips
    1 small red or green bell pepper -- cut in 1" cubes
    -- matchstick strips
    4 green onions -- thinly sliced
    1 tablespoon small capers -- drained (dice
    -- capers if they are large)

    Prepare couscous according to package directions; cool. In large bowl, combine corn oil, vinegar, parsley, garlic, salt, and pepper. Add couscous, tomatoes, zucchini, red pepper, green onions, and capers to vinegar mixture; toss to coat well. Cover and chill.
