    Dilled Sour Cream Cucumbers

    Amount Measure Ingredient -- Preparation Method

    4 medium cucumbers
    1 tablespoon salt
    3/4 cup sour cream
    1 1/2 tablespoons white vinegar
    2 tablespoons salad oil -- (do NOT use olive
    -- oil)
    1/4 cup green onion -- minced
    salt
    freshly ground pepper
    1 tablespoon dill -- minced
    1/4 teaspoon sugar

    Pare and thinly slice cucumbers. Sprinkle with the 1 tablespoon salt. Let stand, 1 hour, at room temperature. Drain, rinse well to remove salt, squeeze dry.

    Combine sour cream, vinegar, salad oil, minced onion, sugar, salt and pepper. Pour over cucumbers. Cover and chill for one hour or more. Lastly, add dill just before serving, mixing well.

    Serves 4.
