PAS: Chicken Mac Salad

2 cups leftover chicken -- cut up
1/2 pound of penne pasta
2 tablespoons mayonnaise
1 tablespoon lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup fresh basil-- chopped
lemon slices -- for garnish
grape tomato slices
Cook pasta to al dente, drain and cool.
Mix mayonnaise, lemon juice, salt and pepper until blended.
Toss chicken with cooled pasta and the remaining ingredients in a large bowl. Cover and refrigerate for at least 2 hours or until chilled. Garnish with lemon slices and grape tomato slices.
Serves 2-4.
Judi's note: I would add 1/4 cup diced onions.
