    Snappy Potato Salad

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    8 medium potatoes -- peeled, cubed
    8 bacon strips -- cooked and finely
    -- diced
    1 cup onion -- chopped
    4 teaspoons salt
    2 cups mayonnaise
    4 cups prepared mustard
    4 cups prepared horseradish
    1 cup celery -- sliced
    4 cups shredded carrot

    In a large bowl, combine potatoes, bacon, onion and salt; set aside.

    In a small saucepan, combine mayonnaise, mustard and horseradish; cook until heated through, stirring constantly. Add celery and carrot; mix well. Pour over potato mixture and toss lightly to coat. Serve warm.
