    Venetian Shrimp Bowl

    12 ounces cooked shrimp -- shelled and halved
    -- lengthwise
    1 can cannellini beans (16 oz) -- drained
    4 large plum tomatoes -- cut into thin
    -- wedges
    2 green onions -- sliced
    1 tablespoon fresh basil -- chopped
    1/4 cup olive oil
    2 tablespoons fresh lemon juice
    1 tablespoon Dijon mustard
    1 garlic clove -- crushed
    1/4 teaspoon salt
    1/8 teaspoon black pepper -- freshly ground
    ripe olives

    Combine the shrimp, beans, tomatoes, onions, and basil in a large bowl.

    Whisk together the oil, lemon juice, mustard, garlic, salt, and pepper in a small bowl. Pour the dressing over the shrimp mixture; toss until well coated. Garnish with the olives.

    Makes 4 to 6 servings.
