Grilled Apple Blue Cheese Sandwich

4 ounces cream cheese -- softened
3 tablespoons crumbled blue cheese
2 tablespoons apple preserves or apple jelly
4 teaspoons liquid honey
8 slices whole wheat bread -- 1/2-inch thick slices
or
8 slices oat bread -- 1/2-inch thick slices
1/4 cup butter or margarine -- softened
2 Gala apples -- thinly sliced
1 cup mesclun lettuce
or
1 cup mixed spring greens
1/2 cup walnuts -- chopped and toasted

In a small bowl, combine cream cheese and blue cheese. Set aside.
In a separate bowl, combine apple preserves and honey. Brush one side of each bread slice equally with butter. Place bread on work surface, buttered side down. Spread preserve mixture equally on half of bread slices and cream cheese mixture on the other halve. Top 4 halves with apples, lettuce, and walnuts. Cover with remaining bread slices, buttered side up, and press gently.
Place sandwiches on preheated panini grill or in a large skillet over medium heat and cook, turning once if using a skillet, for 3 to 4 minutes or until golden brown and cheese is melted. Serve immediately.
TIP: Toast walnuts in a skillet over medium heat, tossing gently, for 3 to 5 minutes or you can do it in the oven set at 350 degrees F. for 5 to 10 minutes. Toast until fragrant and golden brown.
Judi's note: If you want a less potent blue cheese flavor, you can reduce the blue cheese to about 2 tablespoons. Also, if you have difficulty finding apple preserves, apricot preserves is a good substitute.
