Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/2 cup light brown sugar -- packed
1/3 cup unsweetened cocoa powder
3/4 cup 1% milk
2 ounces bittersweet or semisweet chocolate -- chopped
1 tablespoon orange-poaching syrup
or
orange liqueur
Whisk sugar and cocoa in a small heavy saucepan. Gradually whisk in milk until a smooth paste forms. Reduce heat to low and simmer, whisking constantly, for 4 minutes. Remove from heat and add chocolate; stir until melted. Stir in orange-poaching syrup (or orange liqueur). Let cool.
Judi's notes: To make poaching liquid: Combine 3 oranges (sliced), 2 cups water, and 2 cups sugar in a pan. Bring to medium high heat and stir until the sugar dissolves. Simmer for about 2 hours. Let cool with orange slices in pan until the syrup cools. Discard oranges. You now have a nice syrup for use in above recipe. Much easier and less time consuming to use orange liqueur.
