Clear Wine Sauce

1/2 cup sugar
1 tablespoon potato starch
1/2 teaspoon salt
1/2 cup water
1 tablespoon oil
1 tablespoon lemon juice
1 cup Concord grape wine
Combine the sugar, potato starch, and salt in a small saucepan. Add the water and stir the mixture until it is well blended. Cook over low heat, stirring until the mixture thickens and is clear. Now add the oil and lemon juice. Continue to cook just until blended. Remove the saucepan from the heat and stir in the wine. Serve this hot or cold.
Judi's note: The author recommends stirring some drained fruit cocktail into the sauce and then spooning the sauce generously over a plain unfrosted cake. This sauce is great with Apple Shalet (see separate recipe).
