    Lemon Sauce #1

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    juice of 1 lemon
    juice of 1 orange
    2 tablespoons potato starch
    1/2 cup sugar
    1 teaspoon grated lemon zest
    1 teaspoon grated orange zest
    3 eggs -- separated, at
    -- room temperature

    Add water to lemon and orange juices to make 1-1/4 cups. Place in double boiler and add potato starch, sugar, lemon and orange zests, and 3 egg yolks.

    Bring mixture to a boil, stirring until it thickens. Remove from heat and let cool completely, covered with wax paper.

    Beat egg whites well and fold into thickened sauce.

    Judi's note: Serve this sauce with Biblical Kugel or spooned over Chremsel.
