Low-Fat Pesto Sauce

2/3 cup chicken stock
4 garlic cloves -- minced
1 cup fresh basil
1/2 cup Parmesan cheese -- freshly grated
3 tablespoons pine nuts
First you combine the stock and garlic and heat on the stove over medium, till it starts to boil. Remove from the heat and let it cool off.
Next chop the basil and add to the cooled stock, plus the Parmesan cheese and pine nuts. Place in a food processor and whirl until everything is finely chopped and blended.
Meanwhile, cook the pasta of your choice and when ready, just toss the sauce with pasta, serve with additional Parmesan cheese if you want, don't forget the pepper mill and sit down to enjoy a fat free pesto pasta, without the guilt when you go for seconds.
