    RUB: Jamaican Jerk Rub #1

    My recipe files.

    1/4 cup brown sugar
    2 teaspoons garlic powder
    2 teaspoons ground ginger
    1 teaspoon kosher salt
    1 teaspoon ground allspice
    1/2 teaspoon ground nutmeg
    1/4 teaspoon cayenne
    1/4 teaspoon black pepper

    Mix all ingredients and store in a cool, dry place. This will be good for about 6 months.

    Best for: salmon, mahi mahi, pork tenderloin, steak, and chicken.

    Yield: 1/2 cup
