    Amount Measure Ingredient -- Preparation Method

    4 slices bacon
    18 oysters
    3 tablespoons chili sauce
    1 tablespoon Worcestershire sauce
    6 tablespoons heavy cream
    1/2 teaspoon tarragon
    2 tablespoons lemon juice
    1 teaspoon salt
    1/4 teaspoon pepper

    Fry bacon until crisp; set aside to drain. Crumble into bits for garnish.

    Pour off all but 1 tablespoon fat from skillet; add oysters with their liquid. Cook, uncovered, over medium heat until most pan juices are absorbed.

    Mix remaining ingredients; add to oysters. Simmer no more than 5 minutes, to blend all flavors. Add extra seasonings if desired.

    Yield: 4 to 6 servings.
