    Space Coast Shrimp Curry

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    5 tablespoons butter
    3 tablespoons flour
    2 teaspoons curry powder
    - (use 1 teaspoon if you don't
    - like a pronounced curry flavor)
    1/8 teaspoon ground coriander
    1/2 teaspoon salt (optional)
    1/4 teaspoon paprika
    dash nutmeg
    2 cups half and half
    3 cups shrimp -- cleaned and cooked
    1 teaspoon powdered ginger
    1 tablespoon lemon juice
    2 teaspoons dry sherry
    3 teaspoons onion -- grated
    dash Worcestershire sauce
    CURRY CONDIMENTS:
    chutney
    grated orange peel
    flaked coconut
    chopped peanuts

    In a saucepan or skillet, melt butter. Blend in next 5 ingredients. Gradually stir in cream. Cook and stir until mixture thickens and bubbles. Add remaining ingredients. Heat through.

    Pour into casserole appropriate for serving. Bake at 400 degrees for 10 minutes or until top is lightly brown. Serve with curry condiments.

    Judi's note: This may also be served with rice which has been cooked in orange juice rather than water.

    Also, I would bake this casserole in a 375 degree F. oven for about 15 to 20 minutes instead of the 400 degree oven. It might take a little bit longer depending on your oven.
