Southwest-Style Bean Soup with Avocado Salsa

3/4 pound dried red kidney beans

1/3 pound bacon -- cut crosswise into
-- thin strips
1 onion -- chopped
3 ribs celery -- chopped
3 carrots -- chopped
3 garlic cloves -- minced
3/4 teaspoon dried thyme
2 1/2 tablespoons ground cumin
1 1/2 teaspoons dried oregano
1 1/2 tablespoons tomato paste
3 quarts chicken stock OR
canned chicken broth -- low-sodium
1 bay leaf
1 1/2 teaspoons salt
3/4 teaspoon fresh-ground black pepper
pinch cayenne
1/2 cup sour cream
1 1/2 cups Avocado Salsa
AVOCADO SALSA:
1 onion -- chopped
1 tomato -- seeded and chopped
1 1/2 teaspoons Jalapeno pepper -- minced
1/4 teaspoon salt
1 tablespoon fresh cilantro -- chopped
4 teaspoons lime juice
1 avocado (Hass preferably) -- cut into 1/4-inch

Soak the beans overnight in enough cold water to cover by at least 2 inches. Drain.
In a large pot, cook the bacon until crisp. Add the onion, celery, carrots, garlic, thyme, cumin and oregano. Cook, stirring occasionally, until the onions are translucent, about 5 minutes.
Stir in the tomato paste. Add the beans, stock, and bay leaf. Bring to a boil. Reduce the heat and simmer, partially covered, about 1 hour. Add the salt and simmer until the beans are very tender, about 15 minutes longer.
Discard the bay leaf. Add the black pepper and cayenne. Serve topped with the sour cream and salsa. If the soup thickens too much on standing, add some water.
AVOCADO SALSA DIRECTIONS: Put all the ingredients in a medium glass or stainless-steel bowl and stir to blend.
