    Almond Apple Wheat Bread Stuffing

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    2 cups Granny Smith apples -- chopped
    1 1/2 cups sliced almonds
    3/4 cup onions -- chopped
    3/4 cup celery -- chopped
    4 tablespoons butter
    1 egg -- lightly beaten
    1/3 cup apple cider (to 1/2 cup)
    1 teaspoon cinnamon
    1/2 teaspoon poultry seasoning
    1/4 teaspoon salt
    6 cups whole wheat bread -- cubed
    1 cup raisins

    Saute apples, almonds, onion and celery in butter for 5 minutes. Remove from heat. Stir in spices and seasonings. Toss with bread cubes and raisins. Stir egg in 1/3 cup apple cider; toss into bread mixture. Add more cider if needed. This can be baked in lightly greased baking dish, covered, 30 to 40 minutes with turkey.

    This makes enough stuffing for a 15 to 18 pound turkey.

    Judi's note: I would use day old bread or bread that has been lightly toasted to dry it out a bit.
