Apple and Red Pepper Stuffing Balls

1 medium apple (Granny Smith)
1 medium onion -- chopped
1 garlic clove -- minced
2 red bell peppers -- chopped
1/4 cup sweet butter or margarine
6 slices whole wheat bread
1 teaspoon dried thyme
1/2 teaspoon ground mace
1/4 teaspoon black pepper -- freshly ground
1/4 cup apple juice or cider
1 large egg
Core and chop the apple.
Melt the butter in a large skillet, and saute the apple, onion, garlic, and peppers for 10 minutes. Remove from the heat.
Cube the bread and add to the skillet with the thyme, mace, black pepper and apple juice. Beat the egg and stir into the stuffing. Form the stuffing into 4 balls and arrange around a pork or poultry roast for the last 45 minutes or so of roasting time.
*Judi's note: The author did not state what temperature oven to bake this stuffing, but I would bake it at 350 degrees for 45 minutes if baking by itself.
