Corn Bread Apple Stuffing

1/4 cup sweet butter
or
1/4 cup margarine
1 medium onion -- chopped
2 medium celery ribs -- chopped
1/4 cup fresh parsley -- chopped
1 teaspoon dried oregano
2 medium apples*
2 cups corn bread -- crumbled
or
2 large corn muffins
or 4 slices of bread
2 tablespoons apple juice
1 large egg
*Use Empire, Idared, or Golden Delicious apples if possible.
Heat the butter in a skillet and saute the chopped vegetables for 5 minutes. Add the parsley and oregano.
Peel, core, and chop the apples. Saute with the onion mixture for 5 minutes. Stir in the corn bread.
Beat together the apple juice and the egg. Mix into the stuffing.
Stuff into a 5 to 6 pound chicken and bake. The stuffing can be baked separately in a greased 1 1/2 quart baking dish for 45 minutes at 350 degrees F.
Preparation time: 25 minutes
Yield: Stuffing for a 5 to 7 pound bird.
