Slivered Asparagus Saute with Shallots

1 pound thick asparagus -- (up to 2 lb)
-- trimmed and peeled
2 tablespoons olive oil
salt
freshly milled pepper
1 large shallot -- finely diced
1 small garlic clove -- minced
1 teaspoon lemon zest -- finely grated
2 tablespoons parsley -- finely chopped
lemon juice -- to taste
Parmesan cheese (opt.) -- for garnish
bread crumbs (opt.) -- for garnish
Slice the asparagus diagonally about 1/4-inch thick, leaving the tips about 3 inches long. Heat the oil in a large skillet. Add the asparagus, season with a few pinches salt, and saute over high heat until nearly tender. Add the shallot, garlic, lemon zest, and parsley; toss well and cook 1 minute more. Season with lemon
juice and pepper to taste.
Judi's note: The author suggests garnishing this dish with thinly shaved Parmesan cheese and bread crumbs that have been crisped in olive oil.
