Apricot-Ginger Carrots

2 bags peeled baby carrots
-- (16 ounces each)
2 tablespoons butter or margarine
2 green onions -- finely chopped
1 large garlic clove -- finely chopped
1 tablespoon fresh ginger -- peeled and minced
1/3 cup apricot jam
1 tablespoon balsamic vinegar
1/4 teaspoon salt
pinch ground red pepper

Place steamer basket in deep 12-inch skillet with 1 inch water, heat to boiling over high heat. Add carrots and reduce heat to medium; cover and cook 10 to 12 minutes, just until carrots are tender-crisp. Remove carrots and rinse with cold running water to stop cooking; drain well. Place carrots in large zip-tight plastic bag; refrigerate until ready to serve.
In 12-inch skillet, melt butter over medium heat. Add green onions, garlic, and ginger, and cook, stirring often, about 3 minutes, until tender. Add apricot jam, vinegar, salt, and ground red pepper and cook, stirring often, 3 to 4 minutes longer. Let glaze cool slightly. Pour glaze into small container; cover and refrigerate until ready to serve.
To serve, in 12-inch skillet, cook glaze and carrots over medium-high heat 5 minutes. Increase heat to high and cook, stirring occasionally, 3 minutes, or until carrots are well coated and heated through.
Makes 8 accompaniment servings.
Each serving: About 115 calories, 1 g protein, 22 g carbohydrate, 3 g total fat, 0 mg cholesterol, 145 mg sodium.
