    Baked Carrot and Apple Casserole

    Amount Measure Ingredient -- Preparation Method

    2 cups carrots -- sliced
    5 apples -- cut into 1/4-inch
    -- slices
    2 tablespoons whole wheat flour
    4 tablespoons honey
    4 tablespoons butter
    3/4 cup orange juice

    Steam carrots for 12 minutes. Preheat oven to 350 degrees F.

    Put half the apples in a shallow 1-quart baking dish and cover them with half of the carrots. Sprinkle 1 tablespoon of the flour over carrots and apples; then drizzle 2 tablespoons of the honey over the flour. Dot with 2 tablespoons of butter. Repeat the layers.

    Pour orange juice over entire casserole, and bake for 40-45 minutes. Serve hot.
