    Carrots with Cumin

    Amount Measure Ingredient -- Preparation Method

    2 tablespoons butter or margarine
    1 tablespoon salad oil
    2 pounds carrots -- sliced diagonally
    1/2 cup onion -- diced
    1 teaspoon ground cumin
    1/2 teaspoon salt
    1/2 teaspoon sugar
    2 tablespoons parsley -- chopped (optional)

    In 10-inch skillet over medium heat, melt butter or margarine with salad oil. Add carrots, onion, cumin, salt and sugar. Saute 1 minute. Reduce heat, cover and simmer 10 to 12 minutes or until tender. Serve sprinkled with parsley, if desired.

    Each serving about 115 calories each.
