    Whole Braised Mushrooms

    Amount Measure Ingredient -- Preparation Method

    2 tablespoons butter plus additional -- for buttering
    1 1/2 pounds large white or brown mushrooms -- stems trimmed
    1 bunch green onions (6 to 8) -- sliced
    -- (white and light green parts
    -- only)
    1/4 cup fresh parsley -- chopped
    1/2 cup heavy cream
    1/4 cup dry white wine
    or
    1/4 cup dry vermouth
    1 teaspoon ground cumin
    salt -- to taste
    seasoned pepper (Mrs. Dash) -- to taste

    Preheat the oven to 350 degrees F. Generously butter a large shallow covered baking or gratin dish.

    Layer the mushrooms, stem side down, in the dish. Spread the green onions and then the parsley over the mushrooms. In a small bowl, beat together the cream and wine. Pour this mixture over the mushrooms. Season well with cumin, salt, and seasoned pepper.

    Cover and bake for 15 to 20 minutes. Uncover, baste with the liquid, and bake until the mushrooms are very tender but not totally collapsed, about 10 minutes longer. Serve very hot, with a little of the cooking liquid spooned over them.
