    Golden Door Caramelized Red Onions

    Amount Measure Ingredient -- Preparation Method

    1 teaspoon olive oil
    3 large red onions (28 oz) -- thinly sliced
    1 tablespoon pure maple syrup
    or
    1 tablespoon light brown sugar
    1 tablespoon balsamic vinegar
    2 teaspoons dried basil
    2 tablespoons vegetable broth or water

    In a nonstick saute pan, heat the olive oil over high heat. Add the onions and stir constantly for about 10 minutes, adjusting the heat so the onions do not burn, until deep golden brown, caramelized, and soft.

    Stir in the maple syrup, balsamic vinegar, and basil and serve.

    Per serving: 107 calories, 1 g fat, 2 g protein, 21 g carbohydrates, 1 g fiber, 7 mg sodium

    Note: Serve with Polenta with Sundried Tomatoes, Garlic, and Corn (see separate recipe).
