    1 cup oats -- quick cooking or old fashioned, uncooked
    1 cup flour
    1 teaspoon baking soda
    1 teaspoon cinnamon
    1/2 teaspoon allspice
    1/3 cup honey
    1/4 cup skim milk
    2 tablespoons oil
    2 tablespoons unsweetened applesauce
    1 egg
    2 medium apples, peeled -- and diced

    Recipe



    Preheat oven to 400º. Prepare muffin tins.

    In a large bowl, mix first 5 ingredients. In a small bowl, beat honey, milk, oil, applesauce and egg until blended; stir in flour mixture just until flour is moistened (batter will be lumpy). Fold in apples.

    Spoon batter into cups to come almost to the top of each cup. Bake 20 - 25 minutes or until toothpick inserted in center of muffin comes out clean. Immediately remove muffins from pan; serve warm or cool on wire rack.
