    Mocha Chip Muffins

    List of Ingredients

    1 cup flour
    3 tablespoons unsweetened cocoa powder
    1 1/2 teaspoons baking soda
    1/3 cup Splenda
    1 tablespoon sugar
    1/2 teaspoon baking powder
    dash salt
    2/3 cup buttermilk
    1/4 cup light margarine -- melted
    1 teaspoon coffee granules
    1 egg -- beaten
    1/2 teaspoon vanilla
    1/2 cup miniature chocolate chips

    Recipe

    Preheat oven to 375º.

    Combine dry ingredients; set aside. Combine buttermilk and coffee granules until coffee dissolves. Stir in melted margarine, egg, and vanilla. Pour buttermilk mixture into flour mixture and stir with a fork just to incorporate. Stir in chocolate chips. Spoon batter into 8 or 9 paper lined muffin tins, filling 3/4 full.

    Bake at 375º for 25 minutes.

    A coffee glaze can be added if desired.

    Glaze:
    1/2 cup confectioner's sugar
    1 to 2 tsp. brewed coffee.

    Combine sugar and coffee and drizzle over hot muffins. Set aside until glaze is firm.

    Yield: 9 muffins

    Per Serving: 143 Calories; 6g Fat (37.8% calories from fat); 3g Protein; 20g Carbohydrate; 1g Dietary Fiber; 21mg Cholesterol; 331mg Sodium. Exchanges: 1 Grain(Starch); 0 Lean Meat; 0 Non-Fat Milk; 1 Fat; 1/2 Other Carbohydrates.

    NOTES : These are yummy without the glaze. Truthfully, I've never made it!
