Orange Gingerbread Muffins

2 cups reduced fat Bisquick
1/4 cup sugar
3/4 teaspoon cinnamon
1/2 teaspoon ginger
2/3 cup skim milk
1/4 cup molasses
1 egg -- slightly beaten
1 tablespoon grated orange rind
1/4 cup golden raisins
Recipe
Combine sugar and cinnamon; remove 3 1/2 Tbsp. and place in mixing bowl with the Bisquick and ginger. Set the rest of the cinnamon/sugar mixture aside. Combine the milk, molasses, and egg. Make a well in the center of the dry ingredients and add the wet ingredients stirring just until blended. Add the raisins.
Spoon batter into paper lined muffin tins or muffin tins sprayed with butter flavored vegetable cooking spray. Sprinkle with reserved cinnamon/sugar mixture.
Bake at 400º for 12 minutes.
