    German Apple Puff Pancake

    Recipe Introduction

    I reduced the calories by more than 130 per serving and cut the fat by more than half by: using skim milk, light margarine, and replacing the sugar with Splenda.

    List of Ingredients

    3/4 cup flour
    3/4 cup skim milk
    1/2 teaspoon salt
    2 eggs
    1/2 cup Egg Beaters® 99% egg substitute
    1/4 cup light margarine
    2 apples -- thinly sliced
    1/4 cup Splenda
    1/4 teaspoon cinnamon

    Recipe

    Heat oven to 400º. Spray 2 round cake pans with Pam, then place in oven with 2 tablespoon margarine in each pan; rotate pans until margarine is melted and coats sides of pans.

    Beat flour, milk, salt, Eggbeaters and eggs.
    Arrange half of apples sliced thinly in each pan; divide batter evenly between pans.

    Mix Splenda and cinnamon, sprinkle 2 tablespoon sugar mixture over batter in each pan.

    Bake until puffed and golden brown (about 20-25 minutes).

    Serves: 4

    Per Serving: 237 Calories; 8g Fat (31.5% calories from fat); 9g Protein; 32g Carbohydrate; 3g Dietary Fiber; 94mg Cholesterol; 499mg Sodium. Exchanges: 1 Grain(Starch); 1/2 Lean Meat; 1/2 Fruit; 0 Non-Fat Milk; 1 1/2 Fat.
