    2 egg whites
    1/2 cup sugar
    1/4 cup Splenda
    2 tablespoons light brown sugar
    1 teaspoon baking powder
    1 teaspoon vanilla extract
    1/2 teaspoon ground cinnamon
    1/2 teaspoon grated lemon zest
    1/8 teaspoon ground nutmeg
    1/2 cup all-purpose flour
    1 cup apples, peeled -- diced (1 to 1 1/2 medium)

    Recipe



    Preheat oven to 350º F. Spray an 8-inch pie pan with vegetable oil spray.

    In a large mixing bowl, beat egg whites, sugars, baking powder, vanilla, cinnamon, lemon zest, and nutmeg until smooth and fluffy. Beat in flour until smooth and well blended. Stir in apples. Turn into pie pan.

    Bake for 30 minutes, or until golden brown. Pie will puff up as it cooks, then collapse as it cools.

    Serves: 8
