Cholesterol-Free Chocolate Chip Cookies

2 1/2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup dark brown sugar -- packed
1/2 cup sugar
1/2 cup margarine
3 large egg whites
2 tablespoons honey
2 teaspoons vanilla extract
2 cups semisweet chocolate chipsRecipe
Preheat oven to 300º
In a medium bowl combine flour, soda and salt. Mix well with a wire whisk and set aside.
In a large bowl blend sugars with an electric mixer. Add margarine, and mix to form a grainy paste.
In a small bowl, beat egg whites until fluffy. Add egg whites, honey and vanilla to sugar mixture, and beat until smooth. Scrape down sides of bowl.
Add the flour mixture and the chocolate chips, and blend on low speed just until combined. Do not overmix.
Drop by rounded tablespoonfuls onto ungreased cookie sheets, 1 1/2 inches apart. Bake for 18 to 20 minutes until lightly browned. Immediately transfer cookies with a spatula to a cool, flat surface.
Yield: 3 1/2 dozen

Replacing the white sugar with Splenda (hardly worth the difference!):
