1/2 cup bread crumbs -- or more, if needed
1 tablespoon grated orange rind
1 teaspoon salt
1/4 teaspoon pepper
6 boneless, skinless chicken breast halves
1/2 cup orange juice
1/2 cup chicken broth - lite & fat-free
1/4 cup light margarine
1/2 cup honeyRecipe
Preheat oven to 350º. Combine breadcrumbs, orange rind, salt, and pepper. Dip chicken in orange juice and roll in crumb mixture. Place in 15 x 10 x 1-inch jelly roll pan sprayed with Pam.
Bake at 350º for 30 minutes. Combine remaining ingredients; heat until butter is melted. Pour over chicken and bake an additional 30 minutes, basting occasionally.
