    1/2 cup chopped onion
    2 tablespoons light margarine
    32 ounces hash browns, frozen -- thawed
    1 teaspoon salt
    1 dash pepper
    1 can cream of mushroom soup, 98% fat free -- undiluted
    8 ounces fat-free sour cream
    1 cup fat-free cheddar cheese -- grated


    Recipe



    Preheat oven to 350º.

    Cook onions in butter til softened. Mix onion with hash brown potatoes, salt, pepper, sour cream, soup and cheddar cheese. Pour into a 13 x 9" casserole dish that has been sprayed with Pam.

    Bake covered for 45 to 60 minutes.
