Judy's Jazzed Up Parmesan Rice

1 teaspoon olive oil
2/3 cup long-grain rice
1 small onion -- chopped
1 stalk celery -- thinly sliced
1 2/3 cups chicken broth - lite & fat-free
1/4 cup fat-free Parmesan cheese -- grated
1 tablespoon dried parsley flakes
1/2 teaspoon salt
dash pepper
1 can mushroom stems and pieces
1/2 cup frozen peas -- (1/2 - 1 cup)Recipe
Preheat oven to 350º.
In a medium skillet, heat olive oil over medium-low heat; add rice, onion and celery. Cook and stir until rice is coated and light golden brown. Remove from heat. Stir in chicken broth, cheese, parsley, peas, mushrooms, salt and pepper. Turn mixture into a one-quart casserole sprayed with Pam.
Bake covered for 50 minutes; stir after 30 minutes.
