Spicy Black Beans
List of Ingredients
strips of bacon cut in 1inch pieces
1 c chopped onion
¾ c chopped celery
½ c beef broth
1 t cumin
1 t chili powder
1 t salt
1 t pepper
1 t dried oregano
Juice of ½ small lime
1½ t Louisiana hot sauce
3 15 oz cans black beans
1/2 bottle dark beer
2 t minced garlic
Recipe
Sauté the bacon in a stockpot until almost the crispy stage. Add the onion and celery and continue to sauté till the onion is transparent. Do not drain. Adjust heat to medium-high and add the broth, spices, beans and beer, stirring well between each addition. Add the garlic last. Reduce heat to low and simmer for about two hours. Stir the beans often. If more liquid is needed, add more beer. Serve alone or with rice.
