    Recipe Introduction

    My Aunt has been making this for years, and I have tried several recipes but really this one has the best flavor to me. You could play around with the chilis and try different varieties to try and make it to your own liking, but I'd leave the rest of the ingredients the way they are except for the sugar that should be done to taste.

    List of Ingredients

    2 gallons Diced ripe tomatoes (approx 1/2 bushel)
    10 jalapeno peppers diced (optional roasted)
    12 anaheim peppers diced (optional roasted)
    14 cups chopped onions
    3 cups vinegar
    1/2 cup sugar or to taste
    6 tablespoons salt
    3 tablespoons garlic powder
    6 cans tomato sauce

    Recipe

    Combine tomatoes, peppers, onions, vinegar, salt and garlic powder simmer for 2-3 hrs depending on the consistency desired. Stir in tomato sauce and add sugar to taste.

    Hot water bath for 10 minutes

    Yields - 18 to 20 pints

    Note: I seeded 1/2 the jalapeno peppers to get what I would call a med-hot.
