Meat and Ricotta Filling

List of Ingredients
1 tablespoon olive oil
2 medium garlic cloves
1/2 pound ground meat ( such as beef, veal or pork)
1 cup ricotta cheese
1/4 cup grated parmesan cheese
1 large egg yolk
1/4 cup minced fresh basil
1/2 teaspoon salt
ground pepper to taste
Recipe
Heat oil in a medium skillet. Add garlic and saute until lightly colored, about 1 minute. Add meat. cook over medium high heat,stir to break up large until liquid evaporates at meat browns, 3 to 4 minutes. Drain fat. Transfer meat to a medium bowl. cool slightly. Stir in remaining ingredients.
Filling can be covered and refrigerated overnight.
Makes 2 1/2 cups.
