Spinach Salad
Use spinach or red leaf lettuce. Make dressing
day before and marinate 1 lb. chunked mushrooms.
Dressing:
1 1/2 cup white vinager
3/4 cup vegetable oil
1/2 cup sugar
1 1/2 tsp. poppy seed
1 1/2 tsp. salt
1 1/2 tsp. grated onion
Just before serving add:
1 lb. grated Swiss Cheese
1 lb. bacon (cut and cook in chunks, grease free)
Larger (16oz.) cartoon cottage cheese (rinse cream off the curds)
1 small red onion (sliced in thin slivers)
1 larger bunch spinach
toss with dressing and mushrooms
