    • 1/2 cup extra virgin olive oil
    • 1/4 cup red wine vinegar
    • 1/4 teaspoon dried parsley flakes
    • 1 clove garlic
    • 1/4 teaspoon oregano
    • 1/4 teaspoon black pepper


    Instructions


    1. Combine all ingredients in a food processor or blender bowl.
    2. Process the ingredients 30 seconds into a chunky mixture.
    3. You can use immediately or refrigerate. When refrigerated, allow to set for 30 minutes at room temperature and then blend with a fork.


    Final Comments


    This dressing is great for salads, potato or pasta salads.
