    Serves 6. 1 serving = 7 WW Points (includes sauce)


    List of Ingredients


    • 2 lbs lean sirloin beef
    • 1/3 C Dijon mustard
    • 1/3 C light sour cream
    • 1/3 C reduced-calorie mayonnaise
    • 1 Tbsp store-bought horseradish
    • 1 Tbsp blue cheese, crumbled
    • 1 Tbsp fresh lemon juice
    • 1/2 tsp Worcestershire sauce
    • 6 C green snap beans, steamed


    Instructions


    1. Preheat oven to 425
    2. Coat beef evenly with mustard and place in a baking pan lined with aluminum foil; roast for 35 minutes for medium doneness, or longer until desired degree of doneness.
    3. Meanwhile, combine remaining ingredients in a medium bowl; chill until ready to serve.
    4. Slice tenderloin into 1-inch thick slices and drizzle with blue cheese sauce.
    5. Yields about 4 oz of beef, 2 Tbsp of sauce and 1 C of geen beans per serving.


    Final Comments


    According to the picture, they served the beef on top of a bed of green beans, with the sauce on top of the beef.
