Recipe Introduction
This may be called Okra Gumbo, but it is unlike any you have ever had before. My Mom learned to cook this when she was a young girl, in the 1920's, and worked for a German lady who had a resturant in our Home town.
List of Ingredients
2 lbs of tender Okra
1 cup flour
1 cup cornmeal
salt and pepper to taste
Cooking oil
Bacon grease
1 large onion (Chopped)
1 1 lb. can diced tomatoes
Recipe
Slice tender okra for frying. Coat okra lightly with flour then generously with cornmeal. Fry in bacon grease or cooking oil. Drain on paper towels.
In a separate skillet(large enough to hold all ingredients) saute onion in bacon grease, drain and add both the onion and the tomatoes to the skillet, simmer. Add fried okra, which has been drained on paper towels. Simmer on very low heat, turning to make sure it doesn't stick, until well blended. Salt and pepper to taste.
